

Choosing plant-based ground meat is a great way to reduce saturated fat in your diet, and the innovative products currently on the market go much further than just fake burgers. Take this grilled skewers recipe, which will satisfy the vegetarians and carnivores in your house. As an added bonus, vegetarian ground “meat” tends to cling to skewers without sticking to grill grates, so this recipe is ideal for outdoor barbecues. Serve with chopped romaine and cherry tomatoes for a complete meal. You can also season the salad with tahini sauce.

Lebanese vegetarian skewers with lemon tahini sauce
Ingredients
- 8 bamboo skewers (20 cm/8 in)
- 1/4 cup (59 ml) tahini
- 1/4 cup (59 ml) lukewarm water
- 3 tablespoons nutritional yeast
- 3 tablespoons of lemon juice
- 2 medium garlic cloves, finely chopped and crushed, divided
- 1/2 teaspoon salt, divided
- 1 package (12 oz/340 g) Impossible Burger®
- 1 teaspoon of ground cumin
- 1/4 teaspoon ground cinnamon
- 2 tablespoons finely chopped parsley or coriander
- 1/2 teaspoon pepper
Instructions
Soak the bamboo skewers in a pan of cold water for 30 minutes. this prevents them from burning on the grill. You can also use metal skewers, which will not need to be soaked. Preheat a grill or grill pan to medium-high heat.
In a medium bowl, whisk together tahini, water, nutritional yeast, lemon juice, 1 teaspoon garlic, and 1/4 teaspoon salt. Cancel.
In a large bowl, mix ground veggie burger, remaining garlic, cumin, cinnamon, parsley and pepper until well blended. Divide the mixture into 8 portions. Shape the portions on the skewers into flattened sausage shapes, pressing the mixture to mold it onto the skewer and leaving the last 2 inches (5 cm) of the skewers uncovered. Spray the skewers with olive oil spray before grilling.
Grill until skewers are browned on both sides and heated through, about 4 minutes. per side. Serve with tahini sauce.
