Quicker Skillet Lasagna with Ground Turkey

Made in just one skillet and using dried noodles instead of boiling them, this weeknight lasagna has all the flavor of the complex layer casserole with much less work. Substitute ground beef to be more traditional or soy crumble to go vegetarian.

Quicker Skillet Lasagna with Ground Turkey

Ingredients

  • 1 cup (226 g) low-fat cottage cheese
  • 1 tablespoon of olive oil
  • 1 lb (453 g) 93% lean ground turkey
  • 1 small yellow onion, chopped
  • 1 medium green or red pepper, seeded and chopped
  • 1 can (28 oz/794 g) no salt added crushed tomatoes
  • 1 1/2 cups (360 mL) low-sodium chicken broth
  • 2 teaspoons Italian seasoning
  • 2 teaspoons granulated garlic powder
  • 3/4 teaspoon of salt
  • 1/2 teaspoon black pepper
  • 7 (6 oz/170 g) lasagna noodles, broken into 2-inch (5 cm) pieces
  • 1 cup (113 g) part-skim mozzarella cheese, grated

Instructions

Bring the cottage cheese to room temperature while you prepare the sauce and noodles. Heat the oil in a large skillet (30 to 35 cm/12 to 14 in) over medium-high heat. Add the turkey, onion and pepper and cook, stirring and breaking up the meat occasionally, until the turkey is browned, 8 minutes.

Add the crushed tomatoes, chicken broth, Italian seasoning, garlic powder, salt and pepper and bring to a boil. Add the noodles and mix. Reduce the heat to medium-low and simmer gently, stirring occasionally, especially at the bottom of the pan to make sure the noodles don’t stick. Cook until noodles are just tender, 25 minutes. Reduce the heat if the liquid reduces too quickly.

Place a spoonful of cottage cheese on top of the noodle mixture and simmer without stirring for 2 minutes. Remove skillet from heat, top with mozzarella, cover with a lid, and let sit until cheese is melted, about 4 minutes. Serve immediately.
